When you harvested more than hand full of leaves, this is nice and easy way to preserve the leaves.
The process is as described in my blog/recipe on December 3.
In order to do this process successfully, keep the flame low-middle, let the leaves swim in the oil by quick stirring, take the leaves up when 80% transparent. Once the leaves fried, heat of their own cooks the leaves further. If the leaves turned brown, that is over cooked. Try with a few leaves first and feel how the leaves get cooked.
